Sometimes on special auspicious occassions,we need to prepare satwic items. This is that one kind of preparation which is made without any onion and garlic In every Bengali household,this dish is a common number Serving with steamed plain rice make this a delicious one. So,let"s try -----

Ingredients :
- Mung / dehusked split green gram dal - 1 cup
- Gajar / carrot ( cut into small cubes ) - 1/2 cup
- Green matar / green peas ( shelled ) - 1/2 cup
- Phul gobhi / cauliflower ( cut into small florets ) - 1 cup
- Adrak / ginger - 1 inch
- Jeera / cumin seeds - 2 tsp
- Sukhi lal mirch / dry red chilli - 2 nos.
- Dalchini / cinnamon - 1 inch
- Choti ilaichi / green cardamom - 2-3 nos.
- Laung / cloves - 3-4 nos.
- Tej patta / bay leaves - 2 nos
- Haldi / turmeric - 1/2 tsp
- Shakkar / sugar - 1/2 tsp
- Namak / salt - acc.to taste
- Ghee / clarified butter - 4 tbsp.
Preparation :
- Grind the ginger and 1 tsp.of cumin seeds separately.keep aside.
- Slightly crush the cinnamon,cloves and the green cardamom.
- Wash the dal well.
- Heat a kadhai or a pan. Put the dal in it and dry roast on medium flame .until aroma comes, and the colour changes slightly.
- Boil the dal adding water. Be careful,don"t over cook it.
- Heat 2 tbsps. of ghee in another pan,and slightly fry all the veggies on medium heat till light brown in colour. Keep aside.
- In the same pan,add the rest of the ghee,and allow to heat. Keeping the heat medium,put the dry red chiilies and the bay leaves. Stir and add those crushed ingredients. Fry for few seconds.
- Add 1 tsp cumin seeds,and allow to crackle.
- After that,put the grounded masalas,and stir fry for 1 min.
- Now, put all the veggies Stir well,and fry a little.
- Pour the boiled dal onto this veggies,and mix well. Allow to boil. Check the consistency,it should be neither thick nor thin. Add salt and turmeric.
- In the meantime,add the sugar and stir. Cook for 2 mins on slow to medium flame.
- Put off the flame.
- Serve hot with steamed rice.
