MASALEDAR ARBI CHIPS


               Mostly,we enjoy our evening tea,with biscuits or any namkeen. At times,it gets monotonous. Sometimes,we desire something different.  Here,is a wonderful recipe, ---- a tasty,masaledar,chatpate snacks,which can be taken with a cup of hot tea or coffee.


Preparation time  : 15 mins.
Cooking time  :       20 - 25 mins
Servings  :               3 - 4 persons

Ingredients  :
  • Taro roots / arbi  -  500 gms
  • Asafoetida / hing  -  1/4 tsp
  • Mustard seeds / sorshon  -  1/2 tsp
  • Cumin seeds / jeera  -  1/2 tsp
  • Carom seeds / ,ajwain  -  1/2 tsp
  • Curry leaves / patta  -  20 - 25 nos.
  • Turmeric / haldi pwd.  -  1/2 tsp
  • Coriander / dhania  pwd.  -  1 and 1/2 tspful
  • Mango / amchur pwd.  -  1 tspful
  • Garam masala pwd.  -  1 tsp
  • Red chiili / lal mirch pwd.  -  1/2 tsp or acc. to taste
  • Green chill / hari mirch ( finely chopped )  -  1 tsp 
  • Ginger / adrak ( grated )  -  1 and 1/2 tsp
  • Coriander leaves / dhania patta  -  few for garnishing
  • Whole red chilli / khari lal miirch  -  2 nos.
  • Salt / namak  -  acc.to taste
  • Oil  -  2 tbsps. and for deep frying
  • Lemon / nimbu  juice  -  1 to 2 tsp



Preparation  :  Wash well and peel the arbi.  Cut them into slightly thick roundels. Wash the pieces again in water. Allow to dry on a clean towel or cotton cloth.Chop the coriander leaves finely.






Method  :
  • Heat oil for deep frying in a kadhai.,until smoking hot.  Lower the flame on medium heat,and put the pieces in batches into the oil.
  • Fry till the colour change a little. Take out of the kadhai and collect on a plate.
  • Likewise,fry all the rest of the pieces.
  • Now, heat oil in another pan,and put the whole red chilli,hing,jeera,ajwain,sorshon and the curry patta,keeping the flame on medium heat.  Fry well.
  • Then,add the grated ginger and the green chiilies  Fry well.
  • At this point,put the fried arbi pieces into this mixture,and stir.
  • Add the dhania pwd,lal mirch pwd, amchur pwd, garam masala, and the haldi pwd along with salt. Stir well until all the masalas get mixed properly with the arbi.
  • Fry for 2 mins on medium heat. Put the chopped coriander leaves.
  • Now, switch of the flame,and add the lemon juice and mix.
  • Take out on a plate,and garnish with coriander leaves.
  • Serve and enjoy with family and friends.
