Desi Chana Pulao

(Bengal gram pilav)



This protein and essential nutrients filled pulse, Bengal gram,or desi kala chana,as called in India--are taken usually early morning breakfast or sometime as chole.  Here,for a change,it has been made in some other way.  Be it taken for lunch or dinner,it will be enjoyable equally. Adding mint(pudina) leaves enhances the dish with a subtle flavor.


Preparation time  :  5 hrs
Cooking time :  30 - 35 mins
Servings :  2 - 3 person


Ingredients  :

  • Black Bengal gram / Desi chana  --  50 gms / 1/2 cup
  • Basmati rice / chawal  -- 300 gms / 1 and 1/2 cups
  • Tomato ( cut into pieces )  --  4
  • Ginger / adrak ( chopped finely )  --  2 tsp
  • Coriander / dhania leaves  --  1cup
  • Mint / pudina leaves  --  1/2 cup 
  • Green chillies / hari mirch  --  1
  • Cinnamon / dalchini  --  1 inch
  • Cloves / laung  --  4 nos.
  • Asafoetida / hing pwd  --  1/4 tsp
  • Coriander / dhania pwd  --  1 tbspful
  • Cumin / jeera pwd  --  1 tspful  
  • Red chilli / lal mirch pwd  --  1tsp
  • Turmeric / haldi pwd  --  1/2 tsp
  • Garam masala  --  1 tspful  
  • Water / pani  --  3 cups  
  • Refined oil / tel  --  4 tbspful
  • Salt / namak  --  acc.to taste









Preparation  :
  • Wash and soak the chana in water for about 4 - 5 hrs.  Strain the water and boil the chana in 3 cups of water in a pressure cooker till a whistle.

  • Strain the water from the boiled chana and keep the water aside.
  • In the meantime, soak the rice in water for about half an hour.  Strain the water after that.
  • Grind pudina,ginger, tomato, coriander leaves and the green chillies altogether.


Method  :
  • Take a vessel and heat oil in it.
  • Keep the flame low to medium.
  • Fry the slightly crushed dalchini and the cloves.
  • Then,add the hing.  Stir a little.
  • Then add the grinded masala,and begin to stir.
  • Add the dhania pwd,jeera pwd,red chilli pwd and the haldi.
  • Mix and stir well.
  • When the oil begins to separate from the masala,then add the rice and chana.  Mix well.



  • Then,add the chana-boiled water,garam masala and the salt.
  • Allow to boil.
  • Slow the fire, cover the vessel and cook until the rice gets cooked.
  • Serve hot with salads,chutneys.
                     



Suggestion  :  when boiling,be careful that the chana should not be over cooked or mushy.  It should be soft only.
