SABZ MILORI







      Change is beautiful ------- specially,when we get bored eating the same recipes made with the same kind of vegetables over and over again, Not only that,even we get tensed what to offer a guest who is not willing to take any non-veg item. So,here is that kind of lip smacking 'change' which will,i believe fulfill the aforesaid needs of us.



       
Preparation time  : 15 - 20 mins.
Cooking time  :      15 - 20 mins
Servings  :              3 - 4 persons


Ingredients  :

Vegetables
  • Cauliflower / phulgobhi ( cut into florets )
  • Carrot / gajar ( cut into one - inch strip )
  • French beans / faras bean ( cut into one - inch lenghtwise )
  • Capsicum / simla mirch ( cut into thin strips )
  • Cabbage / bandhgobhi ( cut into thin strips )
  • Onion / pyaj ( cut into thin strips )
  • Tomato ( deseeded and cut into thin strips )
Spices
  • Carom seeds / ajwain  -  1 tsp
  • Cumin seeds / jeera  -  1 tsp
  • Whole dry red chillies / sukhi lal mirch  -  2 - 3 nos.
  • Coriander pwd / dhania pwd  -  2 tsp.
  • Red chilli pwd / lal mirch pwd  -  1/2 tsp
  • Chat masala  -  1 tsp.
  • Cumin pwd / jeera pwd  -  1 tsp.
  • Salt / namak  -  acc.to taste
  • Black pepper pwd / kali mirch pwd  -  1/2 tsp
  • Sugar / shakkar  -  1 tsp
Others
  • Curry leaves  -  15-16 nos.
  • Tomato puree  -  1 cup
  • Tomato sauce / ketchup  -  1/2 cup.
  • White vinegar / sirka  -  1/2 cup or less
  • Refined oil  -  2 tbsps 








Preparation  :  Blanch the cauliflower,carrot and the french beans.
                         Strain well and keep aside..



Method

  •  Heat the oil in a pan or kadhai,and put in it the dry red chillies,ajwain,jeera.  Fry on medium flame until  they splutter and the colour changes a little.  Put the curry leaves.
  • Add the onion,cook on medium flame till soft and the color becomes pink.

  • Put the cabbage and the capsicum. Cook them on slow heat for 5 mins.
  • Then add all the blanched vegetables along with the tomato. Add the salt. Cook for another 5 mins.
  • Now,keep the flame on medium, and add the coriander pwd,cumin pwd,black pepper pwd,chat masala,red chilli pwd,sugar along with the tomato sauce, tomato puree and the vinegar. Mix well. Cook for 2 - 3 mins.
  • Switch off the heat,and keep the pan covered for 1 min.
  • Serve hot with rice,chapatti,puri or paratha as you wish. 





Suggestion  :  the vegetables should not be over cooked.. You can replace,omit or add any vegetables of your choice.
