Steamed vegetables ( with garlic tomato sauce )

STEAMED VEGETABLES
with garlic tomato sauce


 

   This recipe is perfect to prepare during those days,when we are unwilling to, and neither have we the time to cook a regular meal, but yet have to satiate our tummy ---so,here it is, just in no time,the food is ready. Of course,the sauce has to be prepared in advance,so as to accompany the recipe.


Preparation time : 30 mins.
Cooking time  : 10 mins & 20 mins 
Servings  : 2 - 3 persons


Ingredients  :

For the steamed vegetables  :
  • Cauliflower / phul gobhi ( cut into florets )  -  10 - 12 nos.
  • Capsicum / simla mirch ( medium ) -  3 nos. 
  • Carrots / gajar  -  2 - 3 nos.
  • French beans  -  20 nos.
  • Green peas / matar ( shelled )  -  1 cup
  • Black pepper / kali mirch powder  -  1 tsp.
  • Butter / makkhan  -  2 tsp.
  • Salt / namak  -  acc. to taste
  • Refined oil / tel  -  1 tbsp
  • Silver foil for wrapping 
For the sauce  :
  • Vegetable stock  -  2 cups
  • Tomato sauce  -  1 to 1 & 1/2 cups
  • Ginger garlic / adrak lahsun paste  -  1 tbsp.
  • Green chiilies / hari mirch  - 2 nos.
  • Sugar / chini  -  2 tsp
  • Salt / namak  -  acc.to taste 
  • Cornflour  -  1 tbsp.
  • Lemon / nimbu juice  - 2 tsp
  • Refined oil / tel  - 1 tsp.




Preparation  :


  • Chop the green chillies
  • Cut the capsicum into dice shapes
  • Cut the carrots into a slight long shapes
  • Cut the french beans into finger shapes


Method  :

For the sauce  :
  • Heat oil in a pan ( non-iron  non-aluminium ),and put in it the ginger-garlic paste,and the chopped  green chillies. Fry a little on medium heat.

  • Then add the stock,tomato sauce,salt and the sugar. Keeping the flame low to medium,cook for 4 to 5 mins.
  • Mix the cornflour with little water to make a paste. Add this paste into the boiling sauce. Let it simmer for 2 to 3 mins. Cook until it attains a semi-thick consistency.
  • Switch of the flame. Let it be cool a little,
  • Now add the lemon juice and mix. Keep aside.
For steaming  :
  • Heat oil in a pan. Put all the veggies into it ,add salt and saute for 2 mins.
  • Remove from fire,and put these veggies into a silver foil. Wrap nicely so that they doesn't come out from inside the foil.
  • Put this wrap into a steamer or dip into boiling water. Steam or boil covered for 10 mins or less on slow heat.

  • Switch off the flame, and take out carefully the foil. Unwrap and take out the veggies into a bowl.
  • Add the black pepper powder and the butter. Mix well
  • Serve hot on a plate with the prepared sauce.
