SHAHI MALPOA





             From east to west  ---------- north to south of India ---- malpoa is a very common and popular sweet dish,.However,each region has its own unique style of preparing it, Whatever the method,malpoa is savoured by one and all. Here, i have endeavoured to offer in a rich,creamy shahi style.


Preparation time : 30 mins.
Cooking time : 30 mins.
Servings : 12 - 13 pieces


Ingredients : 

  • Refined flour / maida  - 1 bowl
  • Milk / dudh  -  1 bowl  
  • Very thick milk / kheer  -  1/2 bowl ( out of 1 ltr milk )
  • Fresh coconut / nariyal ( grated )  -  1/2  bowl 
  • Sugar / shakkar  -  1 bowl ( 500 gms )
  • Nutmeg / jayphal pwd.  -  2 pinch
  • Raisins / kishmish  -  1 tbsp
  • Fennel seeds / moti saunf  -  1 tbsp.
  • Baking soda / meetha soda  -  1/4th tsp.
  • Oil  -  for deep frying


 :Preparation  :

  • Boil 1 ltr milk in a heavy bottomed vessel,stir continously on medium flame until it attains a semi thick consistency. Lower the flame,and stir cook until thick. Keep aside and allow it to cool.
  • In another vessel,boil 500 litre of water with the sugar, Stir to make a syrup of medium consistency.


Method  :

  • Mix all the ingredients, except the oil, in a bowl, and make a smooth, semi thick batter. Keep it for 15 mins rest.

  • Heat oil in a deep bottomed pan / kadhai on medium flame.
  • Pour one ladleful of the batter into the oil,and fry on both sides until light brown. Keep the flame low to medium.
  • Take out of the oil,and dip into the sugar syrup. Allow them in the syrup for about 15 to 20 mins.
  • Take out of the syrup and place on a plate.
  • Serve hot or cold.
