SHAHI MALPOA
From east to west ---------- north to south of India ---- malpoa is a very common and popular sweet dish,.However,each region has its own unique style of preparing it, Whatever the method,malpoa is savoured by one and all. Here, i have endeavoured to offer in a rich,creamy shahi style.

Ingredients :
- Refined flour / maida - 1 bowl
- Milk / dudh - 1 bowl
- Very thick milk / kheer - 1/2 bowl ( out of 1 ltr milk )
- Fresh coconut / nariyal ( grated ) - 1/2 bowl
- Sugar / shakkar - 1 bowl ( 500 gms )
- Nutmeg / jayphal pwd. - 2 pinch
- Raisins / kishmish - 1 tbsp
- Fennel seeds / moti saunf - 1 tbsp.
- Baking soda / meetha soda - 1/4th tsp.
- Oil - for deep frying
:Preparation :
- Boil 1 ltr milk in a heavy bottomed vessel,stir continously on medium flame until it attains a semi thick consistency. Lower the flame,and stir cook until thick. Keep aside and allow it to cool.
- In another vessel,boil 500 litre of water with the sugar, Stir to make a syrup of medium consistency.
Method :
- Mix all the ingredients, except the oil, in a bowl, and make a smooth, semi thick batter. Keep it for 15 mins rest.
- Heat oil in a deep bottomed pan / kadhai on medium flame.
- Pour one ladleful of the batter into the oil,and fry on both sides until light brown. Keep the flame low to medium.
- Take out of the oil,and dip into the sugar syrup. Allow them in the syrup for about 15 to 20 mins.
- Take out of the syrup and place on a plate.
- Serve hot or cold.
