SEMOLINA TREAT
SUJI BARFI
Suji,semolina or rava ---- whatever it is called,is derived from wheat. Whether sweet or non - sweet,suji is used to make varieties of dishes. It is very versatile. Here,i have prepared a sweet version of this semolina. Follow the steps below.
Preparation time : 10 mins.
Cooking time : 20 mins
Servings : 25 pieces (approx. )
Ingredients :
- Suji / semolina - 1 cup
- Besan / gram flour - 1/2 cup
- Khopra / dry coconut ( grated ) - 1/2 cup and 1 tbsp.
- Shakkar / sugar - 1 & 1/2 cup
- Milk - 2 cup
- Choti ilaichi / green cardamom ( pwd ) - 1/2 tsp
- Kaju / cashewnut - 1 tbsp ( cut into small pieces )
- Kishmish / raisins - 1 tbsp
- Desi ghee / clarified butter - 1/2 cup
Method :
- Heat a pan or kadhai. First,put the suji and dry roast it for 1 - 2 mins. in a low flame. Take it out and keep aside.Then,put the besan in the same pan and dry roast it also for about 1 min. Keep it aside.
- Heat the pan again with ghee. Keep, the flame low and put in it both the suji and besan. Stir continously and fry them for about 5 mins.,or till an aroma comes and the color and texture change.
- At this point,add the sugar. Stir continously. Add the milk and stir.
- When the mixture gets dry,add the coconut. Mix.
- Add the cardamom pwd and the dry fruits. Stir and mix well. Put off the flame.
- Grease a thali or a tray.
- Turn the whole mixture on this thali/tray.
- Spread/flat it with hand,and make an even layer of your thickness.
- Sprinkle some grated coconut over the layer,spread and press lightly.
- Allow to set in the fridge.
- After it gets set,take out of the fridge.
- Cut with a sharp knife of your desired shape and size.
- Serve and enjoy.
