Lemon Rice

LEMON RICE


It is a most common dish in southern India. Easy to make,it can be made either with freshly cooked rice or left over rice. Using peanut in this recipe enhances its taste and crunchiness.It is a light dish – anybody can take as a breakfast as well as main course.Follow each steps well, definitely,this dish comes out yummy.

Preparation time: 30  mins. + 10 mins.
Cooking time: 15 mins.
Servings: 3 – 4 persons
Ingredients: 

  • Long grained/Basmati Rice – 2 Cups
  • Mungphali/Peanuts – ½ Cup
  • Adrak/Ginger(Grated) – 1 ½ Tsps.
  • Dhuli Urad Dal/Split And Dehusked Black Gram – 1 Tsp.
  • Chana Dal/Bengal Gram – 1 ½ Tsp
  • Curry Patta/Leaves – 15/16 Nos.
  • Sukhi Lal Mirch/Dry Red Chillies – 2 nos.
  • Mustard Seeds – 1 Tsp.
  • Haldi/Turmeric – ½ Tsp.
  • Salt – Acc. To Taste.
  • Sugar – 2 Pinch.
  • Nimbu/Lemon – 1 No.
  • Oil – 2 Tbsps.






Preparation :  Wash the rice and cook it in water in advance,and keep aside. Soak the dals together in water for about 30 mins. After soaking,drain out the water,and keep the dals aside.


Method : 

  1. Heat oil in a pan/kadhai.
  2. In medium heat,put the dry red chillies and fry a little.
  3. Put the mustard seeds,wait until it crackles.
  4. Add the curry leaves and the grated ginger. Fry until the ginger slightly changes its color.
  5. Now, add the dals,and fry well,for about 2 mins.

     
  6. Lower the flame,and add the peanuts. Fry well.
  7. Now,again increase the flame to medium,and add the cooked rice,along with turmeric,salt and sugar. Mix well and carefully,so that the grains remain intact and not break.
  8. Cook for 2 mins.,so that it blends properly.
  9. Now,switch off the flame,and add the lemon juice. Mix thoroughly.

10. Keep the pan covered for few mins,so that all the aromas of the lemon are absorbed by the rice.
11. Serve hot with any chutney and fried papad.

Suggestions: You can use the dal without soaking in water. In this case, try to fry the dal till brown in color. Be careful that the rice should not be overdone while cooking.
