sweet mango chhunda
It is a very popular dish of western india,traditionally chhunda is made by keeping the whole mixture under the sun for at least 7 to 8 days. Here I have made the dish on gas stove. Chhunda can be enjoyed with roti, paratha, or anything else you prefer. This mouth - watering sweet pickle / chutney is really yummy.
Preparation time: 15 mins
Cooking time : 20- 25 mins
Ingredients :
- Grated mango - 7 cups
- Sugar - 6 cups
- Black Cardamom (badi ilaichi) - 5 nos.
- Roasted Jeera - 1 tsp.
- Red Chilli Pwd. - 1 tsp.or acc. to you taste
- Salt - 1/2 tsp.or acc.to your taste
- Turmeric (haldi) - 1/2 tsp.
Preparation : Slightly crush the jeera and keep aside. Peel the cardamoms and separate the seeds.
Method :
- Put the grated mango into a vessel
- Add the whole amount of sugar into the mango, and mix well with a steel or wooden spoon.
- Cover the vessel and keep the mango mixture in room temperature,for about 5 - 6 hours. Allow the sugar to melt.
- When the sugar melts,put the vessel on gas stove,and cook,continuously stirring on medium heat.
- When the mixture reached a semi - thick consistency,mix all the spices and stir for 1 to 2 mins.
- Put off the flame.
- Allow to cool.
- Pour in a clean and dry glass jar. Store.
Suggestion : If you want to store for long periods,then add 2 tsp of white vinegar after cooling,and mix thoroughly.
